Mums Fruit Cake....

As promised here is the recipe for mums fruit cake that everyone loved on Saturday.....


 4oz Glacé Cherries (chopped)
1 tin of pineapple in juice
4oz of butter 
12oz mixed dry fruit 
6oz soft brown sugar
8oz self raising flour 
2 eggs


Using a large pan, put in the chopped cherries, pineapple and juice, butter, mixed fruit and sugar. Heat gently to melt the butter but do not boil. Leave to cool, then beat in the flour and beaten eggs and mix well. Preheat the oven to 170 degrees - gas mark 3. Line a 8" round tin with grease proof paper and put the mixture in. Bake for about 1 hour 30 minutes or until firm.
